Combine dry ingredients
whisk eggs thoroughly, add oil, molasses, zucchini, and vanilla
mix well, add dry ingredients just until moistened - don't overmix
dredge nuts and raisins in a bit of flour before folding in. Bread: 350F, about 1 hour (card also notes 50-55 min for a tripled batch in multiple pans). Muffins: 375F, about 35 minutes. For a crisper surface, slice and run briefly under the broiler or toast in the oven - good even without butter or margarine. Makes 2 loaves (9x4.5, 2/3 full).
